97. Farro Berries & Barley Salad

Ingredients

farro cooked, cooled

wheat berries

barley or other chewy grain

grapes chopped

romaine lettuce thinly sliced

olive oil

lemon juice

ricotta salata or feta (optional)

Directions

Cook & cool farro and barley.

Toss farro, wheat berries, barley and chopped-up grapes.

Add olive oil, lemon juice, romaine lettuce and ricotta salata (or feta) & toss again.
